Now that the season has properly tipped into autumn, it’s so nice to get cosy and enjoy some wholesome comfort food.
At the allotment where my plot is, there are lots of cooking apples that are falling off the trees, and my neighbour on the next plot has kindly gifted me some of theirs, so this week, I thought I would share with you a family favourite, a super easy recipe for a Butterscotch Apple Pie.
One of the reasons that it’s super easy is that I have listed as one of the ingredients a pack of ready-rolled sweet dessert pastry, but if you prefer to use homemade pastry, you can, of course, make your own.
You will need.
• 2lbs or 900gms of cooking apples that are peeled, cored and thickly sliced.
• 3 ozs or 75gms of light muscavado sugar
• 1 tablespoon of golden syrup
• 3oz or 75g of butter
• 1 tablespoon of cornflour
• 1 tablespoon of lemon juice
• 320gm pack of ready rolled sweet dessert pastry
• 1 tablespoon of caster sugar
• and a little milk to brush.
And this, is what you do!
First, preheat the oven to 200C or 180 if fan-assisted.
Place your sliced apples in a pie dish.
Then, put the muscovado sugar, syrup and butter in a pan and heat gently until the butter has melted and the sugar has dissolved.
Mix the cornflour in a cup with the lemon juice and add to the sauce and keep stirring on the heat until the sauce has thickened.
Then pour the thickened Butterscotch sauce over the apples.
Place the ready-rolled pastry on a lightly floured surface and cut out a lid for the pie and a long strip of pastry about half an inch wide to use around the edge of the rim.
Dampen the rim of your dish and place the long pastry strip around it, then dampen the pastry rim and pop the pastry lid on top, make a small slit in the centre to allow the steam to come out, and if you have any pastry scraps left you can use them to make decorations like perhaps leaves? Lastly, brush with milk and sprinkle with caster sugar.
Pop the pie in the oven for 25-30 minutes or until golden brown.
Then, serve it either on its own, with some creamy custard, or with a scoop of vanilla ice cream.
A delicious way to enjoy one of the fruits of autumn!
