Strawberry Delight: A Refreshing Mousse for Summer

Summertime is the season of sun, fun, and delectable treats, and we’ve got the perfect recipe to tantalise your taste buds! Get ready to indulge in a luscious Strawberry Mousse that’s sure to transport you to a world of fresh, fruity bliss.

I hope that all your listeners are enjoying the summer weather now that it’s finally arrived, so, with that in mind, I thought I’d give you an easy recipe for a scrummy summery dessert…Strawberry mousse!

Strawberries are currently in season and are plentiful in shops and markets, or you may have grown some yourself in your garden or allotment.

So now is the perfect time to make use of them.

This recipe serves four people, but if you have a larger family or you like more generous portions, then simply double the ingredients.

So here goes! You will need:-

250g fresh strawberries, halved if large
25g caster sugar
140g mini marshmallows
200ml double cream
And 100mls of water

And this is what you do.

Put all but 2 of the strawberries into a pan along with 100mls of water and the sugar.

Then, over medium heat, cook the strawberries until soft enough to mash ..about 3 mins.

Take off the heat and squash the berries, using a fork, until pulpy.

Add the mini marshmallows, stirring them into the hot strawberries until they dissolve, and then leave them to cool.

Whip the cream until it holds its shape.

Gently fold the cream into the cooled strawberry mix, then spoon into separate bowls and chill for about 2 hrs, or until set.

Finally, cut the reserved strawberries in half and pop on top of the mousse to decorate.
