Angela – Slow Cooked Chicken Ginger and Nuts
In her comforting and casual tone, Angela told listeners they could easily recreate this wholesome meal in the comfort of their kitchens. With a slow cooker doing most of the work, preparing this hearty feast becomes a breeze, allowing everyone to focus on their busy lives while having a sumptuous supper waiting for them.
The Slow-Roasted Chicken with Vegetables entails a prep time of just 15 minutes. The dish cooks in a slow cooker for 6 to 8 hours, with an additional standing time before serving. It is perfect for making six servings and ideal for families or gatherings.
So, what ingredients do you need to prepare this delicious feast? You’ll require a 6-litre slow cooker, two medium carrots cut into 3-inch pieces, two celery ribs also cut into 3-inch pieces, eight small potatoes quartered, a large pinch of salt, a pinch of pepper, one medium lemon halved, two garlic cloves either crushed or minced, one whole chicken weighing 3 to 4 pounds, one tablespoon of crushed dried rosemary, one tablespoon of lemon juice, one tablespoon of olive oil, and two teaspoons of paprika.
Place the carrots, celery, and potatoes in the slow cooker and season them with salt and pepper. Next, insert the lemon halves and garlic into the chicken cavity. Mix the crushed rosemary, lemon juice, oil, paprika, and a little salt in a small bowl. Rub this flavourful mixture over the chicken before placing it into the slow cooker.
Let the magic happen as you set the slow cooker to low heat for 6 to 8 hours. The aroma of juicy chicken and tender vegetables will fill your home, comforting your heart and soul. Once cooked, carefully remove the chicken from the slow cooker. To ensure it’s perfectly cooked, test it by inserting a skewer into the thigh and ensuring the fluids run clear.
